cheap meals

Hi everyone! I've been trying to be more conscious of the money I

spend on groceries lately, and I wanted to ask all of you what is the

cheapest dish you cook that is still satisfying? For example, a simple

lentil soup with lentils, a can of tomatoes, and broth is an example

of a delicious and cheap meal. I'm sure this is a question relevant to

many now. Thanks!

Rice & beans always does it for me - especially if you cook the beans yourself

vs. using canned beans.  season it up & yum!

My favorite cheap meal of the moment is Black Beans & Rice (posted the recipe

recently).? It's soooo good.? Have made it two weekends in a row and will

probably make it? again?this weekend and make burritos out of it.? Filling,

delicious, cheap and easy.? Dinner is ready in half an hour.? You could probably

stretch it even further with a can of corn.

 

Pasta fagioli is another good, cheap recipe.? You can feed a lot of people with

a pound of pasta and a can of cannellini beans.

Basically any dish that you can make from bulk legumes and/or grains

will be very cheap. This includes legume flours like besan (chickpea

flour). As far as vegetables and fruits, buy what is in season, those

will have the best prices too. Around my area (Los Angeles) tofu can

also be incredibly cheap, sometimes I find 18 oz packages fresh tofu

for under a dollar. Also as a rule of thumb, the least processed the

cheaper (and they tend to be healthier too for the most part).

 

Lentil soup is great, rice and beans are good and super cheap. Here

tortillas are very cheap as well. We often serve hot soft corn

tortillas with refried beans (home made) and all sort of topping,

salsa, shredded cabbage, cilantro, grated cheese for a taco dinner.

You can make some of the burgers in the files very cheaply, or even

some of the not-meat loaves are really inexpensive to make.

The cool thing is there are dozens of different kinds of beans, each with unique

tastes and textures, same with rices and wild rice blends, and grains, and

vegetable and grain based pastas and all the normal pastas, all very yummy and

inexpensive.    Vegetarians have more variety and less expense I think.  It's

rare that I eat over $100 food per month and I eat very well

 

You have me wanting some bean soup now tendrmoon :))

18oz tofu for under a dollar!!    Wow, it's $2.50/lb in NYC - more than most

you can tell you're from a warm climate.. Fresh cost more here in

Ohio in the fall and winter.. store brand processed is cheaper or

beans.

we have 12 oz. for almost $3!  I think that is a regionally priced item, too.

Actually we grow all our vegetables, and you are right, warm climate,

we can do 4 season gardening (and we do), so my vegetable cost is

included in my water bill. Even if you don't grow though, you can

find inexpensive produce in California any time of the year, we are

very lucky that way. We do pay a lot more for housing though!

Wow, this is expensive! Do you know Ranch 99 (or 99 Ranch) markets?

They are large supermarket style Asian markets. They are a chain, but

not sure if they exist outside of California. 18 oz tofu sometimes

for 79 cents. Not only that, you get every brand and type of tofu ever

imaginable, including some that are cut like noodles, baked with

spices, fried tofu, bulk tofu.... You can get soy milk so fresh it is

still warm (they just made it). Now I am craving tofu....

Tofu is wonderful. Your post reminded me that I dreamed last of

preparing a meal, and the main part was baked tofu. You know you're a

real vegetarian when you dream of cooking tofu, lol.

Beth - is there Trader Joe's in NYC ?  Their organic, at 15 oz. (I think) is

about $1.79.

I just mentioned it in a previous post, but the corn chowder that's

in the recipe files is very good, and pretty cheap. Plus I made it

in the crock pot, which is very inexpensive to run.
