I have a question: are we allowed to post links to cooking blogs which may be the source of a recipe or which we may find interesting for other members of the group? I had posted a link before with a recipe and it got deleted from the message...of course it wasn't a completely vegetarian blog but a lot of the recipes are or are easily adapted. Roasted Broccoli Broccoli florets Extra Virgin Olive Oil Garlic cloves, sliced salt and pepper Parmeggiano Reggiano Preheat oven to 400 degrees F. Put broccoli on a baking sheet and drizzle with olive oil, and season liberally with S & P. Lay slices of garlic around and on broccoli. Roast for 15-20 mintes until edges are just starting to brown and broccoli is tender but still firm (does that make sense?!). Once out of the oven, generously shave parmesan over the top and enjoy! Guest guest Posted November 20, 2008 Report Share Posted November 20, 2008 Many veggies are stellar when roasted....carrots, broccoli, cauliflower, brussels sprouts, parsnips, leeks, shallots, garlic, potatoes, beets, squash, turnips, corn..just drizzle with olive oil & roast at 375F for 20-45 minutes (depending on the veggie) until browned & gorgeous. Sprinkle with kosher salt, stir & ENJOY. My kids fight over veggies cooked this way.
