Guest guest Posted November 20, 2008 Report Share Posted November 20, 2008 one of my favorite vegetables happens to be beets so here's my contribution: Sweet and Sour Beets 3 15oz cans beets drained beet juice plus enough water to equal 1 cup 1/2 cup sugar 1/4 cup vinegar 1 stick cinnamon bring beet juice + water to a boil. add sugar and cinnamon. boil one minute add beets. simmer 10 minutes. will keep very well in a quart jar in the fridge for several weeks.
