Guest guest Posted November 20, 2008 Report Share Posted November 20, 2008 Here's one of my favorite vegetarian meals... Tempeh Reubens Cut tempeh into 4 pieces. Toast rye bread. Fry up 4 onions in olive oil. Heat up a bunch of sauerkraut. Fry tempeh in olive oil. Sprinkle with soy sauce while cooking. Put tempeh on rye bread in a baking pan. Cover with onions then sauerkraut. Put lots of cheese on top. Swiss is yummy. Bake at 350 until cheese is melted and browning. For sauce…dice tomatoes, add mayo and a bit of hot sauce. Make lots. Serve over and with reubens. My name is Wendy. I used to be a real vegetarian, but now I am an opportunist and will eat anything :-) For many years I had an organic vegetable farm in Vermont. Now I'm older, wimpier and living in a senior/disabled folks apartment near Saranac Lake in the Adirondack Mountains of New York. I miss my homegrown yummy vegetables! I like to hang out on the computer, go camping and I LOVE to cook :-) Back before I was a vegetable farmer,in the mists of time, I was a chef for about 20 years. It sure was great to be able to get paid to cook and to have somebody else pay for all those expensive ingredients!
