I for got this one.

 

Hominy (I use white.) 1 can

2 to 3 eggs

chopped peppers and onions

(for you who can eat hot peppers, they would be ideal in this)

 

I rinse the hominy and put it in a frying pan with butter (oil or

margarine). Add the peppers and onions. Fry until the hominy starts to

brown. Scramble the eggs in a bowl and add. It is done when the eggs are

set.

 

I just love this, and it is really quick.
