Christie, these are great!! I love the texture, and they have a really

nice, not overwhelming kind of sweetness. Thanks so much for posting the

recipe!

PS The batter reminds me of Donna's Bohemian Cookies, but the finished

biscuits/cookies are pretty different. Not that I eat lots of cookie

dough or anything. That would be cheating and also immature. *grin*

I made these today and have nearly finished the lot :-( They are

wonderful and very easy to make.

Almond Biscuits

 

50g (2 oz) vegan margarine

25g (1 oz) demerara sugar

75g (3 oz) ground almonds

1/2 tsp almond essence

50g (2oz) plain flour, sifted

1/2 tsp baking powder

1 Tbsp non-dairy milk

 

Pre-heat oven to Gas Mark 4/1880C/350F. Cream margarine and sugar,

mix in ground almond and almond essence then sifted flour, baking

powder and non-dairy milk. Mix well together. Take heaped

teaspoonfuls of the mixture, roll into balls between the palms of the

hands. Flatten into biscuit shapes and place on a greased baking

sheet. Bake for about 10 minutes until golden brown. Cool for about 5

minutes on the baking sheet before placing on a wire rack to cool.

 

Makes about 16 small biscuits

 

Only make when you have company!
