Guest guest Posted November 22, 2008 Report Share Posted November 22, 2008 My friends think I'm obsessed with not wasting anything and freezing stuff Whenever I have leftover broth or stocks, or when I make hot sauce, or just about anything that can be used a little at a time, I freeze them in ice cube trays, then seal them up in zip bags, so they can be taken out of the freezer a little at a time. okara, cookie dough and veggie stock are my latest additions. If I need tomato paste, but not a full can, I put the remaining part in a plastic bag ad wait till it is very firm, but not srozen and then cut it into chunks of about 2 tablespoons and freeze the rest of the way. If I steam asparagus the next day I will grate the bottoms and make sweet bread. When bananas are too ripe I make sweet bread. I freeze tomato paste too, I never need rhe full can. I now have a bag full of key lime juice ice cubes. And I still don't know what to do with them. That is not weird, it's being very conserving and non wasteful. Guest guest Posted November 23, 2008 Report Share Posted November 23, 2008 I freeze all kinds of stuff. Just froze about 6 pounds of collards and kale. Hard to find fresh produce here in the winter. Always when I see marked down produce I usually buy it. Dice up peppers and freeze those also. About once a month I cook all day Sunday making different things and then I freeze single serve portions for when I need a quick meal. I eat allot of produce and fruit so it goes pretty quickly. One of my favorites: over-ripe bananas (and it doesn't take much for them to be too ripe for me!) One frozen banana, about 1/2 cup milk, and a little vanilla in the blender makes a good banana shake. You could add sugar, but it's usually sweet enough for me. My mom did this all the time when we were growing up. Good sub for ice cream, too! Audrey S.
