Guest guest Posted November 22, 2008 Report Share Posted November 22, 2008 Made to go with Donna's White Beans - I added some cilantro, lime zest and accidently spilled some habanero hot sauce in the mix not because it needed any of that, but because those are the flavors i like in my corn bread This was delicious, thanks AJ. Now I can't wait for the beans to get done AJ's Hearty Oat And Cornbread 1 cup oats, quick or old fashion 1 cup cornmeal 1/2 cup flour, all purpose 1 tbsp. baking powder 1/4 tsp. salt, optional 1 soy milk 1/2 cup corn kernels 2 tbsps. applesauce 2 eggs or substitute to equal 2 eggs 2 tbsps. onion, finely chopped Heat oven to 425 degrees. Spray an 8 or 9 " square baking pan with nonstick spray. In a medium bowl, combine dry ingredients. Add remaining ingredients that have been combined in a small bowl, mix well.
