Lentil Loaf Question

A week or so ago I made my first lentil loaf using this recipe:

It came out " ok " . I had to cover it in a vegetarian gravy though to

really *enjoy* it. It was very, squishy - for some reason I expected

it to be firmer. Is it supposed to come out like that? 2 out of 6 of

us liked it, but I was hoping I'd love it!

You could add a little more rice or bread crumbs. Those are fresh bread

crumbs made with fresh bread.

Maybe it was too moist (veggies too juicy?) bread not dry enough or for

some other reason or not cooked long enough. Maybe a 9x12 dish instead of

loaf pan. Maybe your oven wasn't hot enough.

I just made my first lentil loaf and I added oat meal to it as well, as

bread crumbs. It cut beautifully and was great the next day on whole

wheat bread with wasabi mustard.

Interesting that this recipe calls for peanut butter.

I find that when I make a lentil loaf letting it stand for 10 -15 minutes

before I slice it helps it to firm up.

Thanks for the advice, I am glad to know that it was in fact supposed

to be firm, lol. I'll try another recipe :)

 

And yes, I thought the peanut butter seemed weird also - but it really

did give it a unique flavor!
