Veggie for Thanksgiving

Cauliflower makes a great one. You can steam the whole head, place in a nice

shallow dish and season it. I do this each year. It's a no hassle veggie.

I like to take steamed cauliflower and mash it with potatoes. Delicious!!!

i make gravy out of leftover cooked cauliflower... a little soy milk, some

spices and viola! some near fat free creamy gravy

It really is a wonderful side dish veggie. I will mist it with balsamic vinegar

and sprinkle toasted almond slivers over it. It's very good mashed too.

It is very versatile. Adding it to mashed potatoes cuts down the starch and

calories.

my veggieble of choice is roasted brussels sprouts.  Happy Thanksgiving

Something my mom did while I was growing up with cauliflower was , take the

head, and leave it as a head, mix together 2-3 tbs of mayo (vegenaise), 2-3 tbs

of mustard, spread on the head, cook in the microwave for about 5 mins, just to

cook thru the head.  Then sprinkle shredded cheddar cheese, and put in micro for

a min or so, just to melt the cheese.  Very interesting tasting
