She asked me for something " easy, " which I interpret as " recipes that don't take hours to make " / " don't require umpteen ingredients. " Not sure of what kind of vegan goodies one can find in Monterrey, Mexico (my friend wouldn't know; she's not even vegetarian). Not a big Chinese or Indian population there. I would think that they'd be able to find tofu, but probably not tempeh or vegan processed " meats " and " cheeses. " Any thoughts or recommendations for a cookbook? Need to order it pretty quickly, since I'll be leaving for Mexico on Dec 4. If you could get suggestions to me by this Wednesday, that would be absolutely fantastic. More than a cookbook it has nutrition guidelines and sample menus, Cookbook sits by my desk so I can look up certain things.
