I would like to make a dessert for her, and mashed potatoes too, vegetarian of course. If anyone has some reciepes that are just for two? Couple of questions: does she actually like tofu and is she a lacto-ovo vegetarian (eggs, dairy)? Carl and I have been vegetarian for around 25 years now and I can count the number of times we've had a me@t substitute on the fingers of one hand. Unless you load up the veggies with a bunch of me@t, she should be fine eating what you serve the rest of the family. Add a special favorite of hers (even if it is red beans and rice). Apple pie is basically already vegetarian unless you use lard to make the crust. Crisco sort of shortenings are made from vegetables. here's a recipe I have to make at least once a week, with my variation at the end. It is one of those very simple, incredibly fast dishes that you can adapt easily to anyone's liking. POTATOES ANNA 3 lg. potatoes 3 tbsp. butter (margarine if she is not lacto-ovo vegan) 1 scant tsp. salt Peel potatoes, if desired, and slice into 1/8 inch slices. Arrange potato slices in two circles with pieces overlapping in lightly greased pie plate. Melt butter with salt and drip evenly over potatoes. Cover dish with foil. Bake in 400 degree oven for 20 minutes. Remove foil and continue to bake until taters are tender and crispy (35-40 minutes). My version has a large, sliced onion lightly tossed in a bowl with the potatoes, then all is layered in the pie plate. I usually let it cook, covered as above, then carefully drain off the excess liquid before doing the crisping cooking. We also have this at least weekly (as a matter of fact, it is in the oven right now to go with me to my son's house for lunch). Another variation: chop red sweet pepper and toss with potatoes and onions. Cook as above, then in the last 10 minutes of cooking, beat 2 eggs with a little salt and pepper, pour over the potatoes. Instant potato fritatta. Good cold, travels very well, very well received at pot luck suppers. Pie version. Peel and slice potatoes. Cook as above (your choice). Make double pie crust (whatever you like), pour off any excess water which has come out of the potatoes/vegetables, pour half cooked potatoes into crust, top with the other crust. Since the potatoes will decrease in volume, I will do more potatoes than will fit in just one pie plate; they all end up fitting and there isn't a huge empty area between potato and top crust. Flute and trim edges, slash top of potato pie as you like, brush with melted margerine or butter (or egg wash if you want the top to be shiny.) Bake till crust is golden brown. Sliced carrots are good in it as well, broccoli is good but ONLY for the first serving. With broccoli it isn't a great leftover. Leftovers good. Leftover broccoli ick.
