Guest guest Posted November 24, 2008 Report Share Posted November 24, 2008 I'm sure we have all had a no bake cookie.. oatmeal chocolate butter peanut butter vanilla, etc. this is my version... i made some tonight, thought i'd share. These are a little better nutritionally than the average no bake. 1/3 cup shortening 2 cups cane juice crystals 1/2 cup soy milk pinch of salt 1 T agave 1/2 cup peanut butter 1/2 cup unsweetened cocoa powder 1/2 cup toasted coconut 2 cups oat bran 1/2 cup chopped nut and seed mixture of your choice 1 t vanilla In heavy sauce pan, cook the shortening, milk, cane juice crystals (or sugar), salt and agave on medium heat, stirring often, until it comes to a boil.. Cook for exactly 2 minutes and 15 seconds Remove from heat, quickly stir in peanut butter, cocoa, coconut, oat bran and nuts and seeds and vanilla, the mixture will appear a little thin, that's ok. Pour into parchment lined or greased pan of choice and put in fridge for at least 30 minutes. Cut into squares. Eat. These are more like fudge than the traditional no bake.
