Guest guest Posted November 25, 2008 Report Share Posted November 25, 2008 Hi...I'm still in the experimenting stage of trying to change over to eating more veggies.. and I thought I would share this recipe that I like to make once in awhile easy and simple Olive oil 4 carrots, quartered ( I put a bunch of baby carrots in also ) 1 small butternut squash, peeled seeded and cut into 1/2 " slices 1 medium eggplant, cut into 1/2 slices 1 large red onion, peeled and cut into 8 wedges 1 apple, cored and cut into 8 wedges 1 pear, cored and cut into 8 wedges 1 red bell pepper , seeded and cored and cut into 8 wedges 2 portobello mushrooms, stems removed and caps cut in 1/2 salt and pepper fresh rosemary Preheat oven to 450*. Drizzle olive oil in a large bowl. Add veggies and fruits, one kind at a time, sprinkle with salt and pepper, toss until evenly coated. arrange the veggies on a baking sheet in a single layer (carrots and butternut squash ; 30 mins) (eggplant and red onion; 20 mins) (apple,pear, red bell pepper and mushroom; 10-15 mins) (Roast until fork tender and garnish) Serves 4 I like it cold also..I'll get up in the middle of the night and sit on the kitchen floor and munch out on it.
