Review Donna's Tofu Fish Sticks

Second time making these - turned out great! First time i got too experimental

with the spices :) This time I used half Mrs. Dash spicy and half Old Bay and

the sauce is great too, tonight is the first time I tried it. I had Tofu f*sh

sticks, roasted beets with onion and vegan mac & cheese and some iced barley tea

" Tofu fish sticks "

1 package of firm or extra firm tofu

1 tblsp kelp powder

1 cup cornmeal ( to coat)

1/3 Braggs Aminos or soy sauce

1 tblsp Mrs. Dash, Spike, Old Bay or Vegit seasoning

1/3 cup water

Olive or Canola oil to coat the baking pan

 

" Dipping Sauce "

1/2 cup mayo or vegan mayo

1 tblsp nutritional yeast flakes

1/2 cup sweet pickle relish

1 tblsp sweet pickle juice

 

Cut tofu into long or short thin strips. Marinate in mixture of water, Braggs,

seasoning and kelp powder for about 1 hour in the fridge. Combine dipping sauce

ingredients in small bowl and refrigerate.

Preheat oven to 400 degrees and use olive or canola oil to coat baking pan.

Dredge the sticks in cornmeal (you can add seasoning & herbs to cornmeal if you

like)

Bake sticks in oven for 10 mins. Turn and bake for 10 more minutes. Let cool a

few minutes before serving with dipping sauce..

Pete thank yopu for the review. Those are so tasty even kids like them. You

know how kids like to dip their food. My younger nephew would only eat them

with ketchup.

lol that's funny (ketchup)...

 

These were so good, i tried an experiment afterwards, since the kitchen was

already a bit messy..  i took a pack of extra firm tofu from the freezer

yesterday, i cut it open, squeezed all the water out i could, put it in the bowl

with the same ingredients as your f*sh sticks, and let it marinate for 30

minutes or so... then

 

in another bowl i made a very thick slurry with about 1/3 cup corn starch and 2

T soy, and a couple drops of liquid smoke (i'm on a smoked tofu kick lately) and

some pepper and some kombu powder

 

I made small patties with the tofu mixture, squeezing out as much of the liquid

as i could, then dunked those in the slurry, then

 

i dunked them in a corn meal / flour mixture and pan fried them in a small pan

(so the oil came up about 1/2 the height of the patties

 

It was almost just like battered salmon patties - in fact i flinched a little

because it was so much like the real thing - they were very good though, so

doh drats, i forgot to type in miso... i added a little bit of light miso to the

tofu mixture
