You can make it a Mexican loaf by adding salsa pr an Italian loaf with pasta

sauce on top and some Italian seasonibg. It freezes well too.Happy top hear

your review

Review PT and Donna's Lentil Loaf

 

 

This turned out great, thank you!

 

" Lentil Loaf "

 

1 c lentils

3 c veg broth

2 c oats

1 c ketchup

2 heaping tbsp mayonnaise (vegan version)

1 tbsp worchestershire sauce (vegan version)

2 tbsp soy sauce

1 tbsp minced garlic

1/2 cup sliced almonds

 

Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off

heat and stir in oats, 3/4 cup ketchup, mayonaise, worchestershire sauce,

soy sauce, garlic, almonds, and 1/2 cup water. Stir well and place in a

greased loaf pan. Top with remaining ketchup and bake at 350 degrees for 30

minutes. Serve with mashed potatoes, mushroom gravy, and a green

vegetable.

 

Makes a great sandwich the next day too. You can use salsa instead of ketchup

to change it around.
