Guest guest Posted November 28, 2008 Report Share Posted November 28, 2008 Red Beans And Greens Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads/Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chunky prepared salsa = (such as chipotle salsa) 2 tablespoons extra-virgin olive oil 1 head escarole -- chopped into small bite size pieces 1 can red kidney beans - (14 oz) -- drained 1/2 red onion -- chopped Salt -- to taste Freshly-ground black pepper -- to taste Combine salad ingredients in a bowl, toss and adjust seasoning.
