Edamame Rice Bowls

Hi Diane, a little bit ago you asked me to post my favorite edamame

recipes. I finally dug them out. This is a good one, lots of

different flavors the go very well together. I'll post the second

one seperately.

 

1/2 c brown rice

1 8-oz bag frozen shelled edamame

1/4 c dried cranberries

2 oz crumbed feta

10 pitted kalamata olives, halved

3 tbsp chopped cilantro

1 tbsp olive oil

1 tbsp lime juice

1/4 tsp red pepper flakes

 

Bring 1-1/4 c water to boil, stir in rice and season w/ sald. Cover,

reduce heat to medium-low and simmer 45 mins. or until rice is tender

 

Bring 2 c salted water to a boil, add edamame and cook 2 mins or

until tender, drain and set aside.

 

Toss together rice, edmame, cranberries, feta, olives, cilantro,

olive oil, lime juice and red pepper flakes in large bowl. Season w/

salt and pepper.

This sounds unusual and good. Is it served warm or cold. I'll try it either way

but am looking for something to take to a New Year's day gathering where the

food will be cold.

It probably should be served warm, I've eaten it cold lol but the rice isn't as

good cold.

I'll go with warm. If my daughter has all cold, I should be able to use a

burner.

If your not against using a microwave that would heat it up nicely too.

Now, why didn't I think of that???? Thank you. That is definitely the way to go.

I don't use a microwave much and tend to forget that it is there - must be brain

dead.
