This is a good one, lots of different flavors the go very well together. I'll post the second one seperately. 1/2 c brown rice 1 8-oz bag frozen shelled edamame 1/4 c dried cranberries 2 oz crumbed feta 10 pitted kalamata olives, halved 3 tbsp chopped cilantro 1 tbsp olive oil 1 tbsp lime juice 1/4 tsp red pepper flakes Bring 1-1/4 c water to boil, stir in rice and season w/ sald. Cover, reduce heat to medium-low and simmer 45 mins. or until rice is tender Bring 2 c salted water to a boil, add edamame and cook 2 mins or until tender, drain and set aside. Toss together rice, edmame, cranberries, feta, olives, cilantro, olive oil, lime juice and red pepper flakes in large bowl. Season w/ salt and pepper. I'll try it either way but am looking for something to take to a New Year's day gathering where the food will be cold.
