Jasmine Rice

I finally found Jasmine Rice at Wal-Marts. I put it in my electric pressure

cooker and six minutes later, I had my rice. I also had the most fragrant

house. It is absolutely delicious. Nothing fancy. I ate it with butter,

salt, and pepper at night and had a bowl with butter, sugar, and milk for

breakfast. Then I shared a bunch with my pastor and his wife. They

couldn't believe the fragrance that went through their house warming it in

the microwave, and they couldn't believe the flavor of the rice. It is now

a number one with me along with brown rice.

Love Jasmine Rice, smells good, tastes great…but after a trip to a

middle-eastern store…

 

Victory and I have changed to an aged rice,

 

Basmati…OH! Yum-yum and the house smells great…

 

 

 

2 c. basmati rice

 

3 c. water

 

1/3 c. Olive oil

 

1 tbsp curry powder

 

1 tsp ground cumin

 

½ tsp ground nutmeg

 

½ tsp ground cardamom

 

2 tsp Tamari

 

¼ c. Lemon juice

 

Salt to taste…

 

Prepare rice,

 

In a skillet, add Oil, Curry powder

 

Cumin, nutmeg and cardamom…

 

Heat gently to mellow the spices and pour over

 

Rice, add the tamari and lemon juice.

 

Note: add a little more water ¼ for softer rice if you like,

 

And if you don’t care for tamari, leave it out. The lemon juice can be

replaced with OJ if you want this to be a little sweet.

 

 

 

Chop up a tomato, scallions or green onions, lots of fresh cilantro and a

dash or two of Balsamic vinegar and olive oil to serve with this…OH, Man!

Yum-it-among-it!

Have you ever tried Basmati rice? It is also very fragrant, and best

eaten simply, IMO :)

We love Jasmine rice too!  One of my Asian friends turned us on to it nearlly 20

years ago and we always have at least 25 lbs of it on hand at all times.  We

also love Basmati and Red Rice.  (If you haven't tried them, I would highly

recommend them!- YUMM-O- especially the brown basmati)

 

One of my favorite ways to make Jasmine Rice is to saute some onion in butter

then add the rice to the pan and saute that until they begin to look a little

transparent.  Add a can of cocnut milk, and the rest water to get the proper

amount of liquid, and cook as usual.  I usually add some sea salt and fresh

cracked pepper when it is done.

 

This is good by itself, but if we have some yellow squash, tomato and peppers

(cooked together with butter, garlic, rosemary, oregano, salt and pepper), I

will serve them over the rice.  It is one of our favorite breakfasts! (and

lunches...snacks... dinners...)

If you ever get a chance to try kalijeera rice, go for it - I think it

might win the fragrant contest! :-)

I will when I find it. I live way out in the country and access to places

with a variety of rice is very difficult for me. Thanks for letting me

know!!

    I believe I have some of this rice.  I don't remember if I have cooked any

yet or not.  That is interesting to know.  I love all kinds of rice (although

I'm not too keen for the " white " rices)...the brown is what I look for

whenever I go any place that has an interesting health food store, market,

Asian food store or anything like " Whole Foods Market " . 

 

    I keep a bunch of different rices in my pantry.  It's always an incentive

to stir up something " veggie " for meals when it's right there--all kinds of

beans,

all sorts of grains and many varieties (and blends) of rice.

 

     I will definitely give this " Kalijira " (or Kalijeera) rice a try soon!
