I got dizzy looking for a recipe, so I just crossed my fingers 1 cup cooked lentils 1/2 cup cooked brown rice 1/2 cup chickpeas (cooked, mashed then measured) 1/2 cup corn meal 1/2 cup AP flour (plus extra for coating) 1 t cumin 1/2 t salt and black pepper splash of soy sauce and hot sauce Throw all ingredients into a bowl and mix well. With damp hands, form into patties and place on a parchment or wax paper lined plate, put in fridge for 30 minutes to 1 hour. Heat oil coated pan to medium heat. Dust each burger in flour and cornmeal, fry for about 5 minutes on each side or until nicely browned. Let rest for at least 5 minutes after cooking (they firm up and have a better texture) For mayo, i blended some chickpeas, oil, soy sauce, hot sauce, salt and pepper and a little liquid smoke..
