Guest guest Posted December 2, 2008 Report Share Posted December 2, 2008 It could be longer than 5 days if: you have a particularly cold area in the fridge (mine is on the bottom shelf in the back), and you peel them, cut them in half and put them into a really tightly sealed container, either plastic or glass, and then wrap that up in a heavy plastic bag tied off. Since I don't love peeling onions, but use them in much of my cooking, I find that doing half to a dozen of them at a time just makes life easier. I also tend to saute them " en masse " and then do much the same thing with that so that I can just take out the container and I'm ready to cook. In almost everything savory I make has onion in it. I just cooked up a bunch and some have even been EATEN--and the majority had sprouted quite a long time ago. I just washed them well, chopped up the sprouted (green!) parts, cut the bulb parts open, took out the layers (because some onions had some layers that had gone soft and icky--spoiled, I am sure--and then there were sections (a few separated layers) that looked perfectly good. I separated these and cleaned them really well--and chopped them in with the " fresh and un-sprouted " onions I had. They all seemed to do all right and so far, no one has had problems from eating the COOKED onions that were like this before they got cooked! I don't know if I did a bad thing or not, but there were several large onions that had sprouted, and I could not see wasting them ALL, just because parts of the bulbs went off. I figured to cut the bad spots off and wash them really well--I only used what was firm textured and not discolored in any way. The flavor seemed very much " normal " . Now, somebody, please don't tell me I'm gonna pass out or something from eating those onions!
