Guest guest
Susan asked: " Can any one suggest perhaps another side dish, using green beans? " I'm often asked to bring this to potluck gatherings, which I wrote out longhand, and no longer recall the source: ============== Braised Green Beans 1 lb fresh or frozen (or French-cut) green beans 2 medium onions 3 or more cloves of garlic 1/2 tsp salt 3 T olive oil 3 ripe tomatoes (I often use my frozen whole tomatoes, and remove skin by dunking them no longer than 2 seconds in a small pot of boiling water) salt and pepper to taste ============== It's very simple, and *always* popular, at least with the folks I potluck with. Guest guest
Oh - did you want the instructions too? <grin> Saute the onion and garlic in the olive oil until translucent. Toss in the green beans. Add tomatoes and seasoning, and simmer slowly for 30 mins or so or until beans are very well done. Forget to mention I use freshly ground pepper from the mill.... enjoy! Guest guest
I adapted a recipe for the holidays that I got from an NPR story the Monday night before T'giving. It's called braised green beans. here's how I did it: Taking about a lb of green beans, heat a bit of oil in a large bottomed pan or skillet. NPR used peanut oil, but I did canola and a tad of toasted sesame oil, which is perfect. Heat the oil over medium heat, then turn heat to high for 30 sec and add the beans, with a health pinch of salt. Sear them for a couple of minutes, moving them about frequently, and when they are nice and almost done, add some chopped garlic and red pepper flakes. I also added some sliced shiitake mushrooms which were not part of the original recipe. That's it, they're done. I went to a dinner with some people I don't know well, and they raved about these beans. It was offered on NPR as an alternative to the standard casserole. ENjoy.
