Guest guest Posted December 2, 2008 Report Share Posted December 2, 2008 I am still new to the veg stuff myself, so I dont know about the burrito, but a couple of years ago I came across this salsa, that I ended up loving. Cowboy Salsa 1 can (15 oz.) black eyed peas 1 can (15 oz.) black beans, rinsed and drained 1 can (15 oz.) whole kernel corn, drained 1/2 cup onion, chppped 1/2 cup green bell pepper, chopped 1 can (4 oz.) diced green chiles 1 can (14.5 oz.) diced tomatoes, drained 1 cup Italian style salad dressing 1/2 tsp. garlic salt In a medium bowl, combine black eyed peas, black beans, corn, onion, green bell pepper, jalapeño peppers and tomatoes. Season with Italian style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors. Guest guest Posted December 2, 2008 Report Share Posted December 2, 2008 Burrito's We take a can of Worthington Vegetarian burger, which you pull out of the can in pieces with a fork, into a hot frying pan with a little oil. Brown it over med. high to high heat, flipping and stirring it often. Then take either a paper package of Taco Seasoning or we use some out of one of those large container of Tone's Taco seaoning that you buy at Sams Club, and mix it with water according to what it says to use for 1 lb. of " beef " and stir it into the browned vegetarian burger. Then take a burrito shell and spray a larger heated frying pan with some pam and add your burrito shell. Brown it lightly one one side and then flip it over. Add some of the Taco seasoned Vegetarian Burger down the center, then a layer of grated cheese, some sour cream, taco sauce, diced onions, sliced olives, diced green peppers and salsa. Fold up the bottom and then the sides over that, the way burrito's are foldered and you have yourself a great burrito. Guest guest Posted December 3, 2008 Report Share Posted December 3, 2008 One of my favorite mexican recipes is simply grilling or broiling up some veggies--portobello strips, red, green and yellow pepper strips, onion, Maybe some squash or zucchini strips. Sometimes I also cook up some of the Quorn naked chicken cutlets in there, too. Add whatever spices sound good--salt, pepper, cayenne, cilantro, make up some fresh guacamole, with fresh avocado, sour cream and salsa....rice and beans on the side, very simple, easily made in to fajitas, too! If you eat dairy (well, even if you don't, there's soy " cheese " you can use), there's a nice Mexican flavors dish I like to make, and you can embellish it any way that suits you and your boyfriend. I call it " Mexican Lasagna " , and it's basically made with: 1) Layers of tortillas (flour, corn, whole grain, even nacho chips, if you don't have the big tortillas on hand.. 2) On top of the tortilla layers, you can spread mashed, cooked beans (canned or home- made--you decide what kind you like best: black beans, kidney beans, pinto beans, small red beans, pink beans...etc. 3) Over the bean layers you can spread some jarred (or homemade) salsa of your choice, hot, mild, FIERY...chunky or blended smooth... 4) Then, over this, sprinkle a little or a lot of your favorite shredded cheese(s)--mild Jack cheese is good, or any creamy, melting Mexican " queso fresco " type. 5) That's basically it for the main part. You can add to the mix on the layers if you like: chopped tomatoes, chopped bell peppers, chopped black and/or green olives, sour cream fresh or dry cilantro leaves, maybe an extra sprinkle of chili-pepper or similar seasonings, ground cumin, a bit of ground coriander seed, and so on. Maybe some chopped baby or regular spinach leaves can be tucked into the layers, too. If you are into it, you can put some meat substitute " grounds " (Quorn, Morningstar, Boca, etc--textured soy protein crumbles) in with the beans to give it more " texture " --it's optional, and I have found the beans alone are good enough as the base anyway. You can make this as elaborate or as basic as you want to. Just find a baking pan-- like a glass rectangular dish or a round casserole oven-proof dish, and spray it first with non-stick, then lay in a tortilla (or layer of nacho chips) then the beans, then the salsa, then the cheese and anything else--repeat with another layer of tortilla, beans, and so on, until you have it as full as you like it. Bake this...oh, I don't exactly know the time and temp, but I'd guess about a good 350 degrees (F) for maybe 30 minutes, or longer, until all the cheese gets nicely melted and the flavors have a chance to blend well and it's all good and HOT! You can make almost any kind of " sides " for this--a simple salad...you can make some spicy corn muffins that would be good with--use whole corn and some spicy peppers (or salsa--I've done this, too--yummy!) in the mix. I have learned that creamy rice pudding seems to be popular with Mexican people--at least the ones I know. It would also be simple to make and fit in with the " theme " idea. (A bland, vanilla dessert can off-set the spicy food and give a nice contrast.) Neither my husband nor I are truly " vegetarian " just now, but DH (dear hubby) is less " into " it than I am, and he eats this " Mexican Lasagna " eagerly. He also begs for the traditional " Italian " Lasagne, and I haven't given him his wish yet, mainly because I used to have the recipe where you don't need to boil the pasta, and I don't have it any more!
