Guest guest Posted December 3, 2008 Report Share Posted December 3, 2008 I was in a hurry yesterday, so I attempted a very fast lunchbox tofu recipe. Lunchbox Teriyaki Tofu Tofu 350 grams of tofu, cut into strips. 3 tablespoons of Teriyaki sauce (I bought mine, but I am sure there are recipes out there that taste better) 1/2 clove of garlic minced Salt to taste Non-stick olive oil spray -Place a sauce on medium heat until warm, spray the oil and let it heat up. Add 1/2 of the minced garlic on the pan and cook until golden. -Place the tofu strips on the pan and let it cook for 2 minutes on each side. -Add 2 tablespoons of teriyaki sauce and finish cooking the tofu. -Add salt if desired. -Add the remaining tablespoon of Teriyaki sauce, mix and remove from heat. Spinach 250 grams of spinach 1/2 clove of finely chopped garlic Salt pepper to taste Non-stick olive oil spray -Wash the spinach and place in boiling water for about 3 minutes tops. Remove from pot, drain out all the water. -Place a pan on medium heat until warm, then spray with the non-stick spray and add 1/2 of the garlic. Cook until the garlic is golden. -finish cooking the spinach on the pan. Place Teriyaki tofu and spinach inside 2 pita breadsa nd take to lunch. You can also place the pita bread on the pan right after you've made the tofu, so it absorbs some of the teriyaki flavor. That took around 30 seconds.
