Parmesan Artichoke Balls

 

1 15-ounce can artichoke hearts, drained and finely chopped

1 cup seasoned bread crumbs

3 eggs

2 tablespoons olive oil

4 tablespoons grated Parmesan cheese

2 tablespoons lemon juice

3 garlic cloves, minced

1/4 to 1/2 cup grated Parmesan cheese

 

Preheat oven to 350 degrees. In a medium bowl, combine artichokes, bread crumbs,

eggs, oil, Parmesan cheese, lemon juice and garlic. Form mixture into small

balls 1-inch in diameter and roll in remaining cheese. (At this point, you can

refrigerate the mixture for up to 6 hours before baking.)

Set onto lightly greased baking sheet. Bake balls until heated through and eggs

are set, about 10 minutes. (Allow 15 minutes total baking time if balls have

been chilled.)

Makes 36 balls.
