Guest guest Posted December 4, 2008 Report Share Posted December 4, 2008 Parmesan Artichoke Balls 1 15-ounce can artichoke hearts, drained and finely chopped 1 cup seasoned bread crumbs 3 eggs 2 tablespoons olive oil 4 tablespoons grated Parmesan cheese 2 tablespoons lemon juice 3 garlic cloves, minced 1/4 to 1/2 cup grated Parmesan cheese Preheat oven to 350 degrees. In a medium bowl, combine artichokes, bread crumbs, eggs, oil, Parmesan cheese, lemon juice and garlic. Form mixture into small balls 1-inch in diameter and roll in remaining cheese. (At this point, you can refrigerate the mixture for up to 6 hours before baking.) Set onto lightly greased baking sheet. Bake balls until heated through and eggs are set, about 10 minutes.
