Guest guest Posted December 4, 2008 Report Share Posted December 4, 2008 i've replaced frozen corn tortillas for bread crumbs in several burger recipes, and never had a problem. I break the frozen tortillas into little pieces while they are frozen and run them through the food processor... i use bulk masa harina to make my own tortillas... and i know nothing about gluten content, but maybe a 1/4 cup of the masa would work just as well in the loaf... hope that helps --- On Fri, 12/5/08, Kathleen Pelley <kmpelley wrote: I have a gluten allergy and want to eliminate the bread and bread crumbs.
