Guest guest Posted December 8, 2008 Report Share Posted December 8, 2008 Garlic Baked Squash 2 lbs. winter squash 2 tablespoons flour 1 tablespoon oil 7 to 8 garlic cloves, chopped 2 tablespoons fresh parsley, chopped salt and pepper to taste Preheat oven to 325 degrees. Wash and peel the squash and cut into bite sized pieces. You can use acorn, butternut, or hubbard squash or similar winter squash varieties. Coat the squash cubes with flour that has been seasoned lightly with salt and pepper. Grease a casserole dish with oil or vegetable spray. Put the squash into the pan, and top with garlic and parsley. Season with salt and pepper. Bake for 60 to 80 minutes, or just until squash is tender. Yields 6 servings. I kind of tend to pass squash up since it's kind of blah at times.
