I like to use 1/2 margarine and 1/2 butter for the butter flavor -- and the margarine helps keep the frosting from " melting " at room temperature. No need to refrigerate this when spread on cookies. Buttercream Frosting 1 stick margarine 1 stick butter 1 1/2 tsp vanilla extract 1 1/2 tsp almond extract pinch salt 3-4 c powdered sugar 2-3 tbsp milk (or heavy whipping cream for a treat!) I use it for sugar cookies, mainly -- and I usually do 1/2 butter and 1/2 margarine, so it tastes like butter but it doesn't " melt " at room temp. In the kind of heat we're having in my area right now (heat index 100+ F) I would put cake or cookies with this frosting in the fridge, because of the milk and butter. I add almond extract in addition to the vanilla when I do that, or when I put it on white cake, that's my favorite variation! Audrey S.
