Sweet and Spicy Adzuki Orange Spring Rolls

These turned out surprisingly good, so I thought I'd share what I did

 

When I cooked my adzuki beans i added some orange juice and a slit whole

habanero pepper and removed it once the beans were cooked, and I made some home

spring roll wrappers that turned out surprisingly good wtih the egg replacer.

 

Sweet and Spicy Adzuki Orange Spring Rolls

 

2 cups cooked adzuki beans

1 cup finely shredded cabbage

1/4 cup finely shredded carrot

1/4 white onion chopped finely

1 stalk of celery finely chopped

1/4 cup fresh cilantro finely chopped

1/2 teaspoon sesame oil

1 T Fawnette's Worcestershire Sauce (no fish)

1 t fresh ginger grated

2 cloves minced garlic about 2 t

1 t chile sauce

1 t habanero sauce (or cook beans with a whole habanero pepper :)) leave this

out if you don't like spicy - habanero adds a hot fruity flavor

1 t orange zest

1 T cornstarch

1 t orange juice

12 homemade or purchased 8 in spring roll wrappers

4 t vegetable oil

salt and ppper to taste

 

Soak (for 1 hour) and cook adzuki beans (or used canned if you can find them)

 

Preheat oven to 425 degrees F (220 degrees C).

 

Put cooked beans in food processor, pulse a few times.

 

Add cabbage, celery, orange zest, carrot, onion, cilantro, sesame oil,

Fawnette's worcestershire sauce, ginger, garlic and chile sauce, habanero sauce

- pulse until well combined

 

Mix cornstarch and orange juice in a small bowl

 

Brush each wrapper with cornstarch and OJ mixture

 

Place approximately 1 1/2 T of the bean mixture in the center of spring roll

wrappers.

 

Roll wrappers around the mixture, folding edges inward to close. Brush edges

with the cornstarch and OJ mixture to seal

 

Put the spring rolls in a single layer on prepared baking sheet and brush each

with the vegetable oil.

 

Bake in preheated oven for 10 minutes, turn rolls and bake an additional 10

minutes or until crispy and light brown
