I have been working through some digestion problems, and on Tuesday I will have a gallbladder scan. If it needs to come out, I hope to make that happen before the end of the year; we have already met our deductible for 2008... The bitterly cold weather we have been having in Omaha got me making all kinds of soups, including this one, which is crazy good, I think. Football Stew (also known as " Sensitive Veggie Yoga Guy Stew, " 1 medium onion, chopped 2 stalks celery, chopped 6 carrots, chopped 4 or 5 potatoes, chunked 2 tsp salt 2 T quick tapioca 1 T sugar 1-2 cups tomato juice (I usually use more) Arrange veggies in a shallow baking pan. Blend dry ingredients and sprinkle over veggies. Add tomato juice. Cover with foil and seal tightly. Bake 2-1/2 hours at 350 degrees.
