The Frugal Gourmet's Irish Potato Soup calls for chives. That's our main use

for them, but we've also tried chives in potato pancakes, dips, and cheese

balls. Sorry, I don't have the recipes handy. I usually print out something

from allrecipes.com. You can do a search based on specific ingredients.

 

Have you tried drying them? I believe you can use your oven if you don't have a

dehydrator.

An extension of my previous post. I hope it's okay to mention another

group - preserving-food can give you lots of hints on drying, freezing,

canning, and using ingredients.

 

Just thought, you can also cut a slit in a potato, insert chives, and bake as

usual. The flavor permeates the entire potato.

I too grow reg. Chives and Garlic Chives and yes they do grow like sweet little

weeds. Mine are in containers and come inside for the Winter. That way I can

snip Chives all year round. I use chives as a garnish for almost anything. They

are wonderful sprinkled on fresh salads and wraps. Great in pasta and potato

salads and perfect with cream cheese or sour cream. I put them in my Hummus,

salsas and dressings.

It is a good idea to freeze Chives if you can't keep a container inside as they

do not dry well. They lose all their wonderful flavor if dried. They also tend

to lose their flavor if cooked.

I grow them too Kathy & yes, they do grow well. We put them in almost

everything - omelets, mashed potatoes, rice, sushi, on baked potatoes, snipped

fresh into salads. I use the flowers in salad dressings & dips - boy are they

strong!
