Guest guest
Last night I prepared pupusas for the first time, as well as curdito. I'm certainly not a pro at making the pupusas. They were sort of round and only a few leaked their filling. But they were tasty and that's what's important. Sissy's recipe in the files here called for cheese; I used lightlife taco filling and veggie shreds. I served them with curtido and salsa. From vegweb site: The curtido is simple to make, its just one medium shredded cabbage, two shredded carrots, and one thinly sliced medium onion (you can go fancy and add shredded zucchini if you like). Place the veggies in a container and fill it up with one part vinegar and two-part water, but make sure the veggies are completely covered. If you want you can dilute the vinegar more. add salt to taste, and about two tablespoon of oregano. Stir and Let it sit for an hour or two. I'm not a fan of coleslaw, but I like curtido! I even took some leftovers for lunch today. Cyndy
