Louisa and Marilyn - eggs!

Yes, that is a good way to cook a fried egg. You can also break an egg into

a saucer, pierce the yolk, cook in the microwave. I have a 1250 watt and it

takes 30 seconds. I also spray a little oil on the saucer. You could make

a nice bread pudding!!! I get free-range brown eggs from a friend, and yes,

they have a much better taste, and I know they are fresh.

I have free range hens who are pretty busy laying eggs.20 hens and I average

15 to 18 a day. You cannot beat fresh. Better color and taste all of the way

around.And wicked brownies.

You have that right. And no pale yolks. Sometimes there are two yolks in

them!!

I get tons of compliments when I bring deviled eggs to barbecues -- that's

my stand-by, they're easy and even using free range eggs, cheaper than a lot

of side dishes. I think part of the reason people like them so much is

because I use free range eggs.

 

I just checked Craigs List and somebody in my area just posted today that

they have fresh free range eggs for $1.50 a dozen -- I'm going to try to get

some this weekend! :)

Yes, deviled eggs are always a hit, and I love to add things to the yolks.

I get my eggs for $1.00 per dozen, but the woman who has them is my friend.

I had the most wonderful egg the other day in a Chinese cafe. They served a bowl

of soup with a whole hard boiled egg simmered in the broth. The white of the egg

took on the color and flavor of the broth and the yolk stayed bright and creamy.

Very nice.

broth because Chinese broth is usually chicken??

This was a vegetable broth that was sweet and tart and rather orange in color.

It had baby bok choy, shredded carrots, snow peas and water chestnuts that I can

readily recall.... and the pretty delicious egg.

I wish you lived close to me.......my free-range hens are giving me between 24

and 28 eggs a day! I am getting to the point that I am going to have to boil

eggs and feed them back to my chickens!!

That would be nice! How many hens do you have? Egg salad sounds like a good

way to use those up... unless you're watching cholesterol -- and you can

only eat so much egg salad! :)
