Guest guest Posted January 3, 2009 Report Share Posted January 3, 2009 Cream of Lettuce Soup 2 tablespoons butter or matgarine 1 tablespoon cornstarch 1 teaspoon salt 1/2 teaspoon sugar optional 2 cups milk or soy milk 2 cups broth or water 1 head of lettuce Half chopped onion 3 tablespoons cold water Wash and chop the lettuce fine. Put the lettuce in a pot with 2 cups of broth or water. Add the salt, sugar (if using) and onion. Cook slowly for 20 minutes. Heat the milk in a double boiler. Blend the cornstarch with 3 tablespoons of cold water and then pour into the hot milk. Cook until it thickens slightly. Add the lettuce and butter and serve. This soup may sound strange, but it really is very good! You may want to add your own seasonings to your taste. It is bland cooked this way so spice it up a bit.
