But we all made the change voluntarily a few months ago without having to be convinced. We did it for health reasons. We watched the 6 part lecture on youtube, The Food That Kills and also something along the same lines on our own local news channel that changed our food views. I'd personally like to go vegan along with one of my daughters. Not sure if the DH will tho being he loves his cheese. LOL Anyway, here's my butternut squash soup recipe. Hope you love it. 1 large butternut squash peeled nutmeg 2 tbsp unsalted butter /OR/ margarin salt and pepper if desired 1 onion chopped small 6 cups vegetable broth Cut squash into cubes/chunks. In a large pot, melt butter. Add onin and cook until translucent, about 8 minutes. Add squash and broth. Bring to a boil and then simmer and cook until squash is tender. Remove squash chunks (yes, some onion will come out too) with a slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper, then serve. It's super yummy. I'd say it makes about 8 large servings.
