Because I have lyme disease and must take a dizzying array of medications and

supplements, I have to eat after a 1 1/2 hour of fasting--some of my meds

require fasting.

 

My preference to do this is to have some left-overs from the night before like a

bean and vegetable soup. However, today, I also have no left overs so I will be

eating a gluten-free bread toasted with some butter on it. One of the " fun "

side effects of lyme disease has been the development of a gluten allergy so no

wheat, barley, or rye in my diet. With the gluten free toast, I will have a

banana, green tea, and some cheese [brie, today].

Nice and simple, a couple of ounces of rolled oats, a scattering of mixed dried

fruit served with milk and married with a mug of Lapsang Souschong - yum!

Today I had an Amy's tofu scramble pita for breakfast. During the week I

usually just have something simple like cereal or a bagel. On the weekends I

make a very nice breakfast. My husband's favorite is morningstar sausage

crumbled in gravy over buttermilk biscuits or chocolate chip pancakes.

Today is puffed millet, with blueberries, and hemp milk. No sugar are you guys

I like to keep it simple with organic oatmeal and fruit which you can vary by

season. Filling, easy and mmmmmmm delicious!

A smoothie with carrot tops, beet greens, lots of strawberries, half an

apple, half a banana, and some ground flax seeds--Yummy! Peace, Mo

Today it was fig bread on the go....tomorrow probably zucchini muffins.

My breakfast is 1/2 cup of muesli with almond milk, fresh strawberries and a

sliced banana washed down with a mug of raspberry and pomegranate tea.

I drink protein coffee while I get ready for work. I have no appetite first

thing in the am. For my am snack (I have to eat a bunch of tiny meals a

day) I usually have homemade granola (I figured out the PB granola last

night) and some home made yogourt. Sometimes Ill make pumpkin muffins which

are like little pumpkin pies (no flour ) with protein powder and eggs and

stuff in them. YUM!

We are a huge breakfast - eating family. If we could choose only one meal a day,

it would be breakfast. When there were 9 of us living here, typically we'd go

through 2 dozen eggs, a loaf of bread (the real stuff, not store bought), a

couple pounds of the nameless pork product, a large pot of grits and whatever

else I could get ready and throw to the starving horde.

 

My favorite breakfasts are whole wheat toast with peanut butter or hash browns

with onions and peppers, or grits and a poached egg, or a flour tortilla with

scrambled eggs, onions, peppers and Cheddar or oatmeal with chopped apples,

cinnamon and brown sugar or a bagel with cream cheese or peanut butter or a

slice of dark pumpernickel bread with Cheddar cheese, broiled till bubbly and

starting to brown. (nope, not even going to think of posting my recipe for dark

pumpernickel as it is rather involved.) Carl says his favorite is " All of the

above minus the pumpernickel. "   Go figure. He had his first slice of home made,

not white bread after we got married.

 

For the kids, I would often make up a huge bowl of pizza stuff, all mixed

together, and it was very fast and easy to put a quarter cup of the pizza mix

(Mozzarella, pizza sauce, veggies and whatever they wanted) on a half of an

English muffin, bake till bubbly and handed to the kids as they ran to the bus

stop or work.
