Guest guest Posted July 9, 2009 Report Share Posted July 9, 2009 Because I have lyme disease and must take a dizzying array of medications and supplements, I have to eat after a 1 1/2 hour of fasting--some of my meds require fasting. My preference to do this is to have some left-overs from the night before like a bean and vegetable soup. However, today, I also have no left overs so I will be eating a gluten-free bread toasted with some butter on it. One of the " fun " side effects of lyme disease has been the development of a gluten allergy so no wheat, barley, or rye in my diet. On the weekends I make a very nice breakfast. My husband's favorite is morningstar sausage crumbled in gravy over buttermilk biscuits or chocolate chip pancakes. For my am snack (I have to eat a bunch of tiny meals a day) I usually have homemade granola (I figured out the PB granola last night) and some home made yogourt. Sometimes Ill make pumpkin muffins which are like little pumpkin pies (no flour ) with protein powder and eggs and stuff in them. YUM! When there were 9 of us living here, typically we'd go through 2 dozen eggs, a loaf of bread (the real stuff, not store bought), a couple pounds of the nameless pork product, a large pot of grits and whatever else I could get ready and throw to the starving horde. My favorite breakfasts are whole wheat toast with peanut butter or hash browns with onions and peppers, or grits and a poached egg, or a flour tortilla with scrambled eggs, onions, peppers and Cheddar or oatmeal with chopped apples, cinnamon and brown sugar or a bagel with cream cheese or peanut butter or a slice of dark pumpernickel bread with Cheddar cheese, broiled till bubbly and starting to brown. (nope, not even going to think of posting my recipe for dark pumpernickel as it is rather involved.) Carl says his favorite is " All of the above minus the pumpernickel. " Go figure. He had his first slice of home made, not white bread after we got married. For the kids, I would often make up a huge bowl of pizza stuff, all mixed together, and it was very fast and easy to put a quarter cup of the pizza mix (Mozzarella, pizza sauce, veggies and whatever they wanted) on a half of an English muffin, bake till bubbly and handed to the kids as they ran to the bus stop or work.
