Yes it is in our files and I make it all the time. I'm surprised the red

lentils work. It is a great recipe, I usually brush BBQ sauce across the top

then I bake it.

Speaking of Lentil Loaf - red lentils

 

 

I have been reading the comments on the lentil loaf and I must be using a

different recipe. I make mine with red lentils but can't remember where I got

it.

 

this is the one I use. Is it in our files? I can't find it. It makes great

sandwiches.

 

Lentil Loaf

 

1 c lentils

3 c veg broth

2 c oats

1 c ketchup

2 heaping tbsp nayonaise

1 tbsp Worcestershire sauce

2 tbsp soy sauce

1 tbsp minced garlic

1/2 cup sliced almonds

 

Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off

heat and stir in oats, 3/4 cup ketchup, nayonaise, Worcestershire sauce,

soy sauce, garlic, almonds, and 1/2 cup water. Stir well and place in a

greased loaf pan. Top with remaining ketchup and bake at 350 degrees for 30

minutes. Serve with mashed potatoes, mushroom gravy, and a green

vegetable.

Sue, try the Mushroom Walnut Loaf -- I made that last night and it wasn't

mushy at all. Maybe because it doesn't have any lentils in it! :) I did add

veg. worcestershire sauce to it.

Hi Donna

 

I had lentil loaf for supper tonight with a salad. It was definitely not mushy.

I don't eat mushy so I must be doing something right. I do cook it about 45 -

50 minutes or maybe longer and let it cool in the pan so that means it's still

cooking.

 

I use BBQ sauce on it too and in it as part of the " ketchup " . I don't really

like ketchup although some of the ones from the health food store are tolerable.

They just don't have enough zip for me and are usually way too sweet.

Hi Donna

 

I cook the lentils for 20 minutes just like in the recipe - which does not

specify any particular colour of lentils.
