I haven't seen your recipe but you can firm them up by adding some breadcrumbs

to the mix.  Then, You can form the patties and place on waxed paper and

refrigerate them for an hour, then pat some seasomed breadcrumbs mixed with a

little cornmeal and fry them up, they will have a nice crunchy texture then. 

Try some of the bean patty recipes from our files too.

We are big fans of the MorningStar black bean burgers and I found a

copycat recipe that had the right flavor but we cannot get the mixture

to " set " in the middle so it ends up being like a pile of mushed up

bean on a bun once you bite into it. Anyone have any suggestions to

Another thing you might want to try is reconstituting some TVP and adding it to

the black bean mixture. It's a good transition from meat feel patties to those

with more bean feel. Additionally it adds more protein and comes in a lot of

different flavors, including jerky made with it.

 

Jeanne in GA - whose adult kids STILL haven't figured out they ate a lot of TVP

when they were growing up.
