I was out for two days after I made the request to join and had quite a few new emails. LOL Should be fun. I'm working towards Vegetarian-Vegan-Raw. Maybe we'll see how it goes. Even now I don't eat too much meat etc. As far as recipies. . . . . How about one from Ani's Raw Food Kitchen? It's like one of two that I've made thus far but I liked it. Sweet Corn Chowder (Serves 4) Chowder Base 3 ears sweet corn 3/4 cup walnuts 3/4 cup extra virgin olive oil (I went a little less and it was better in this was a lot of oil but it does add texture to the soup) 1 clove of garlic 1 tsp sea salt 2 cups water chowder toppings 1 C corn kernels (Set aside from above) 1 Avacado, diced 1/3 bunch cilantro leaves 1 tsp cracked black pepper Directions Set aside 1 C of corn kernels to use as chowder topping. Blend everything else corn, walnuts, oil, garlic, salt, and water until smooth. Then pour into 4 bowls and put the other ingredients on top (remaining corn, avacado, cilantro & black pepper) keeps for 1 day Honestly it's pretty watery for a chowder but I liked it and am excited to make it again once sweet corn is ready here in IL.
