Vegetable halwa - Indian (Gujarati Style) Sweets Recipe

 

Halawa, refers to many types of sweet confection, across the Middle

East, Central Asia, South Asia, the Balkans, and the Jewish World. Halwa

based on semolina is popular in Iran, Turkey, Somalia, India, and

Afghanistan. Another common type,based on tahini (sesame paste), is

popular in the eastern Mediterranean and Balkan regions, in countries

such as Bosnia and Herzegovina,Croatia, Romania, Serbia, Montenegro,

Bulgaria, Russia, Greece and Cyprus, Egypt, Iraq, Israel, Lebanon,

Macedonia, Albania, Syria,Central Asia, Caucasus region and Turkey. It

is also popular on the central Mediterranean islands of Malta.

Tirunelveli a city in Tamilnadu state of India is called Halwa City.

Halwa may also be made from other ingredients, including sunflower

seeds, various nuts, beans, lentils,and vegetables such as carrots,

pumpkins, yams, and squashes.

 

Ingredients:

 

1 cup - finely grated bottle guard

1 cup - finely grated carrots

3 cups - sugar

1cup - ghee (clarified butter)

1/2 tsp - cardamom powder

2 tsp - grated pista (pistachio)and badam (almonds)

 

Method

 

1. Heat ghee (clarified butter) in a pressure cooker

2. Add grated bottle gourd and carrot, close the lid to let it cook for

5 mins.

3. Now remove the lid, add sugar and cook it in high flame

4. After 10 mins, the sugar dissolves, and the ghee (clarified butter)

separates.

5. Now switch off the stove.

6.Pour out halwa in a serving bowl, top it with cardamom powder,

gratedbadam (almonds) and grated pista (pistachio), and serve.
