I don't like to freeze and thaw tofu, I like tofu from the package and if I want chewy I use the TVP chunks. That's what really surprised me about them, how chewy they were. Lovely! I also got granulated TVP so I spent an hour or so downloading TVP recipes. So many good things to eat!
