The best beans in the world are from a pressure cooker, all done in 50 mins and

the flavor is locked in.

Hello!

 

I flash boiled dried black beans following the direction on the bag to use with

the ffabulous black bean and rice recipe I got from here... but the beans were

crunchy.  I timed everything correctly.  Is it better to soak overnight?

Deanne,

If you live at a high altitude like I do you, at apx.5,000 ft. above

sea level you could cook those beans 'til the cows come home and they

would always be " crunchy " . Pre-soaking here is a must. Unless of course

you use a pressure cooker like my daughter does. I'm told that some

folks at sea level do not have to soak over night.
