Guest guest Posted May 16, 2009 Report Share Posted May 16, 2009 Make sure you split and toast them before using as an open faced sandwich. They taste a ton better toasted. Spread with some crunchy peanut butter and orange marmalade. The hummis on it sounds great to, but toast first. Also try other sandwich spreads from our sandwich recipe folder. As others mentioned, bake them with pizza sauce, toppings and cheese. It is one of our favorite quick pizza meals. Make breakfast McMuffin Sandwiches with them. Toast the bread and then spread with Mayo or Veganaise, and add some scrambled eggs, cheese slice and vegetarian baked " bacon " , such as Morningstar Farms. Guest guest Posted May 16, 2009 Report Share Posted May 16, 2009 Before I discovered that I had a gluten allergy, I used to actually make them from scratch, split them, toast them, and put lots and lots of butter on them for breakfast. With a cup of tea, they are a perfect breakfast. Sprinkle in some dill weed, minced dried onions, chives and seasoned salt to taste. Spread on split and toasted English Muffins. Top with slices of cucumbers. Judy . Guest guest Posted May 16, 2009 Report Share Posted May 16, 2009 Judy, you stinker. It's time for bed and yet again you post a recipe I want now now now now now. Still love ya. If you do eggs, cheese, something I've made for about 50 years now is an omelet on an English muffin, first for Father, then the kids, now for myself. I mince sweet red peppers and onions together. Saute in a little butter, margarine or oil in a small frying pan, add a beaten egg, cover and let cook till the egg is cooked, over a low heat. Sprinkle with a little grated American or cheddar cheese, or cheddar/Colby mix, then fold omelet over into a quarter. Toast English muffin, lightly butter, then put folded omelet on the bottom, top with the other half of the muffin. They make great portable breakfasts. The other thing I used to make Father at least twice a week was eggs Benedict minus the ham for me and with the ham for him. Lots of recipes online and you can buy a mix for the hollandaise but don't! It is so easy to make and far superior than the dry powder mix. The secret, if there is one, is to constantly whisk the sauce as it is cooking, and if it breaks, I used to whisk in another beaten egg yolk and cook till velvety. I used to make muffin pizzas for the boys when they were still young. It isn't traditional, but I would mix together grated mozarella with pizza sauce (make your own or buy the jar stuff and tweak to your preference.) I like the pepperoni or Italian sausage flavored TVP mixed in. To serve, toast the muffins lightly then put a very generous blob of the cheese and pizza sauce mixture on top and bake at 350*F till melted. I'd mix up 5 pounds of grated mozarella cheese with about a quart of marinara sauce and keep it in the refrigerator to make quick breakfasts for the kids. It sounds like a lot, but 7 adolescents can put down a lot of food and all pizza is, is cheese toast with a little pizza sauce. Thankfully the used bread store used to sell English muffins for .50 a package. Cheap. Now my preferred way to do an English muffin is to toast, slather with real butter fresh from the cow and put a nice dollop of honey on top. Or in place of butter, natural peanut butter with honey on top. Ack, I'm going offline before I end up getting a snack before bed. I have put pizza sauce and cheese on for years and love them. I think they are great for kids. Just the right size. Now, you spoke of making hollandaise sauce from scratch. I have only ever seen the meatballs, ground crumbles, and several mock chik'n products. I have never seen " burgers " , sausages or " ham " Quorn. I would dearly love to try any of those afore-mentioned products (and I know the burgers and sausages are available in the U.K.). I just don't know how to go about purchasing them!
