Guest guest Posted December 27, 2008 Report Share Posted December 27, 2008 HI Mona: You can add white veggies to your mashed potatoes, sometimes I add celery root to my mashed potatoes and no one seems to know the difference. My daughter and I bought cauliflower and broccoli to mix with our mashed potatoes tomorrow night, I am going to chop the potatoes and leave the skin on, then boil the potatoes, I will also roast the veggies and then puree them and mix into the mashed potatoes. When I make a cream soup I add cream to it I use some potatoes and cauliflower that I cooked in the soup and then puree in the blender, the soup has a nice creamy texture, some times I add a little bit of soy milk your can also use regular milk. You can make a roasted root veggie soup and puree it all and the kids may never know they are eating veggies. In a message dated 12/27/2008 9:54:23 P.M. They are always asking me while I am cooking, " what's that! " I always say just taste it and tell me if you like it. (Or) What do you think it is? One evening there was one of our boys when we first came here, (he looks up to my husband) and at the dinner table I had brussel sprouts which we adore, he did not take any when they were first passed around the table, then he saw my husband put some on his plate, then Morgan said, I guess I will have some of them too. Well, he did try them, but did not really like them. Maybe he will try them again someday, and decide he does like them. I told him to try them with a little mustard but he declined. Living with these kids is a challenge, but sometimes they do things that make the hard times not seem so bad. Most of these kids have issues, that are sometimes hard to think about, we just try to help them heal and by living with them the couples in this progrom are living examples of how family life should be, and help them learn to get ready to live out in the world on their own. Guest guest Posted December 28, 2008 Report Share Posted December 28, 2008 Monna, I do what I cal stuffed mashed potatoes. Basicaly what goes on a stuffed baked potato....just mash them. Potatoes.....quartered, but not peeled. (but you can if you want) 2-3 tbs sour cream 2 tbs cream cheese 1 cup coarsely chopped broccoli 1 cup coarsely chopped cauliflower 1 cup corn 1 cup white or yellow cheese, whatever is liked best 1 cup bacon (fake) coarsely chopped 1 cup chili or just beans onions garlic Cook up the potatoes til soft enough to mash, then add the sour cream and cream cheese, they any or all of the ingredients listed. Depending on what I have on hand is what I put in there. I have even put bell peppers in it. Sounds like that would freeze well in individual serving dishes, too.... Audrey S.
