It is best to let the long pasta dry a bit before cooking it or you can end up with it stuck together (lots of flour). You can lay it out on a counter (sprinkle with flour) if you have the room or you can hang it (like on a wire clothes hanger or drying rack). I made lasagna the other day and I let the long sheets of pasta sit on the counter while I prepped everything else. They weren't dried out and worked wonderfully. Very yummy. I find that I often need to add more flour than the recipe calls for. You tend to get the hang of it the more you do it. I use a number of different recipes. I try to make vegan pasta but unfortunately I find the recipes with egg a little better. I have tried recipes from: Simply Heavenly (Veg. Monestary Cookbook), Brianna Clark Grogan (Nonna's Italian Kitchen), Bittman's how to cook everything, and Joy of Cooking. I don't have a favourite yet. I also used one of the white sauces from Brianna Clark Grogan's Nonna's Italian Kitchen which was very yummy (I had no cottage cheese or ricotta and it filled in very nicely). It would be a fabulous substitute for alfredo sauce (not nearly the fat!!). Once you get the hang of it making pasta is super easy and super fast. Enjoy!
