We no longer have a grill however my family used to love corn on the cob

cooked on the grill.

When I go to a BBQ I make up my red bean and spinach burgers and my black

bean burgers, to bring.

I do bake them first so they hold together.

I grill the whole pineapple, better than a dessert. Skin it, sprinkle cinnamon

and a little cardamom over it and grill, I use the top shelf on the grill so it

grills slowly.

I also have a grill pan and I chop up an array of veggies and grill them.

Since the grilling season is upon us, how about we share some grilling

ideas? I just bought a charcoal grill and can't wait to get started. My

omg Donna, another reason for cardamom!! If it weren't for you, i would

never have known what it was! I LOVE IT!!!!

gonna do this real soon, it sounds Thai doesn't it? Gonna get a

pineapple tomorrow!

you can use your cast iron pan to cook anything on the grill, even

canned veggies. I don't know if they will taste much different, but

cooking them on the grill will not heat up your house. i am going to try

it this week. i have two cast iron pans luckily.

We grill at least once a week.

 

We do potatoes, beets and carrots in aluminum foil with edges sealed, we put

fresh rosemary, oregano and sage inside, a little olive oil and salt, grill

little pouches slowly.

 

Cauliflower has not been mentioned, it is delicious grilled. We like it a lot

marinated in chimichurri sauce (sauce is posted on the files). I cut it in

thick slices for grilling, rather than the flowerets.

 

I like eggplants and peppers whole, as well as the smaller zucchinis, grill

slowly and when done place in pan with cover (or a bag, or foil), let them steam

for a while and remove peels. I then slice them and dress the vegetables with a

little olive oil, salt/pepper and very finely minced garlic and parsley.

 

Asparagus. If you have a few of the fatter ones, thread a kebab stick on top and

the bottom, making a 'sheet' of the asparagus spears, they can then be turned

simultaneously. For a marinade I like sesame oil, garlic, ginger and soy sauce,

maybe a little maple syrup added too, and some ground up white pepper.

 

Mushrooms grill great, Portabellos are wonderful but the smaller ones work well

too, sometimes using a kebab stick to pierce them makes it easier.

 

In the summer when we get the bat size zucchinis, slice them into 1/2 to 1 inch

rounds, they end up being the size and shape of burgers. They can be grilled,

many marinades work for them, they soak up flavors so well. They can be eaten

in a burger bun with the 'works' too.

 

Tofu and seitan grill really well too. I like seitan in chimichurri too, but

the Asian inspired marinade (soy sauce, sesame oil, ginger/garlic/white pepper)

work well too. Tofu works with many many marinades. I like thawed out

previously frozen firm tofu and then marinated in regular or home made BBQ

sauce. Easy and quick. Unfrozen firm marinated tofu works well too, just find

a marinade flavor that you like.

 

Something else for the ovolacto crowd: Haloummi cheese! it is a cheese that

works specially well for grilling, you can find it in middle eastern stores, I

believe it is from sheep's milk. It is very good, I did not discover this until

last year, it is featured in a lot of our grill days this year.

 

The pineapple is great too, I like mine in thick slices. Figs with honey, a

little goat cheese in the center and freshly ground pepper are great too, when

figs are in season.
