Question of the Week - What's for Breakfast

Some days, I mix up some rolled oats with cinnamon, dried cranberries, dried

blueberries, chopped walnuts, sliced or slivered almonds a couple of cashews

and vanilla soy, almond or hemp milk. I take it to work pour it into my

coffee cup and heat it in the microwave.

Some days I take a peanut butter with banana and strawberry wrap, sometimes

I do a sliced tofurkey sandwich or wrap. Once in a while a bagel.

I forgot I have been adding some candied ginger to my oatmeal.

Porridge/oatmeal with either dried fruit or candied ginger tossed through it!

(Oh and a seriously large amount of tea LOL)

Easy question. Every day it's steel cut oatmeal with ground flaxseed, cinnamon,

and raisins or banana. Tomorrow however I'm going to try the just posted pumpkin

oatmeal leaving out the syrup or agave since I don't sweeten my cereal.

Today the boys had pancakes from the freezer. Whenever I make pancakes I

make extra batter and cook up a load of " silver-dollar " pancakes. I layer

them with wax paper, pop in a freezer bag and they are ready for warming in

te oven, microwave or toaster. Great for snacks too!!!

I alternate between a few favorites:

 

peanut butter and chocolate chip oatmeal-- 1 cup water, 1/3 cup nonfat dried

milk, 1/2 cup regular oatmeal, mix together and cook on medium heat until done.

Take off the heat, add a tablespoon of peanut butter, mix, put in a bowl and

sprinkle about a teaspoonful of mini chocolate chips on the top.

 

oatmeal with whatever dried fruit and nuts I feel like added in, and a half cup

milk (cow or soy).

 

1 slice hearty whole wheat toast (or hearty whole wheat and raisin toast) topped

with a tablespoon of almond butter and half of an apple (thinly sliced)

 

smoothie made with a quarter package of silken tofu, a banana, and either 1.

cocoa powder, 1/3 cup cold coffee, some sweetener and ice cubes or 2. 1/3 cup

orange juice, frozen strawberries and a little sweetener.

 

homemade yogurt parfait made with bare naked granola, sliced berries and non-fat

greek yogurt.

Whole grain Cream of Wheat with wild blueberries(frozen), tsp honey and

tablespoon chopped walnuts, 2 morningstar farms breakfast links, decaf

coffee with skim milk. This is just about every morning for me!

During the work I keep it pretty simple. I have either cold cereal

with soy milk, bagel with cream cheese or graham crackers with peanut

butter.

 

On the weekends I tend to make a nice breakfast. I will either make

eggs, morning star bacon, toast and juice. Or I will make chocolate

chip pancakes and morning star bacon.

I know, Im a bad girl, but I dont eat breakfast.  BUT I work nights, so this is

what I usually do.  Go to bed between 1-3 in the afternoon, get up at ten, at

work by 1045.  So I end up going by gas station or someting, and grabbing a soda

or coffee, and then taking in someething in to work to snack on during the

night.  At one of the gas stations I go to, they have dill dip with cut up

carrots and celery for $2.  So I get that, or they have a salad for $4.  I have

gotten the salads at times, but prefere the carrots and celery since its

cheaper.  And usually some chips (Im so addicted to chips!)  I have tried to get

into the habit when I get home from work to have either toast with peanut butter

and yogurt, or pancakes with *sausage* or something.  Sometimes its even a

frozen pizza from freezer (after all been up all night!) or leftover chili or

something that I had popped into fridge or freezer.  Then just before I go to

bed I have a snack,

something small,. some yogurt or peanut butter and jelly, or something else

quick.  I dont eat much, but my body sure tells another story!

I would switch things around so that I am having breakfast around 9:30, a

vege lunch when you have your lunch hour, then a supper of some sort when

you get home. Working late like that requires you to switch your meals

around.

This is not going to inspire anybody.......but it is the truth.

 

A cup (or two) of very strong coffee with some milk. That's it.

 

This might not seem healthy, but it is certainly a step up from the

standard Spanish businessman's breakfast, which is: strong coffee with

a shot of brandy and a cigar! (hey, it is vegan even...LOL) so you

see, it is all a matter of perspective ;-)

No, that wouldnt really be possible, because I get home from work at 730 am, and

I am usually starving by then.  So that is why I try to eat toast, or something

else filling, especially oatmeal or yogurt, that way by noon I just have a snack

such as popcornn or something.  And at my job they dont have a lunch hour.  Or

really even breaks.  So I just grab something that I can snack on while at the

desk.  Usually Im the only aide on the floor, so I cant really leave the floor

for more than a few minutes at a time.  But yesterday at the grocery store I got

some veg Italian sausage, so I can do a quick sandwich with that, and I got 

some other veg snacks.  You would think after 15 years of nights I would have

this one figured out!  Course only been trying the veg thing for two years now

too.

Hope you can find a way to be able to have at least one good meal per day.

It seems like a lot of vitamins are missing from what you are eating now.

Good morning all!

Breakfast is very important, as I have recently discovered. I didn't

eat much for breakfast until I started on a vegan path. Changed a lot

of thing at that time, it was a life-altering period.

I like fresh oatmeal (not instant) with fruit and possibly nuts of

some sort. I have borderline high cholesterol and oatmeal helps that.

It also helps tide me over until mid-morning snack (another topic?). I

like to eat small meals with snacks in between.

Other days I'll have granola (I know, high fat; hence the cholesterol)

with fruit and nuts with rice milk.
