I really love it and I hope you do too! Mad VEGETARIAN CHILI 1 tablespoon olive oil 1 large green pepper, chopped 2 jalapeno peppers, seeds removed, diced 2 celery stalks, chopped 1 medium onion, chopped 3 medium carrots, chopped 4 cloves garlic, diced 2 tablespoon chili powder 28 ounce can crushed tomatoes 1 can Spicy Rotel 2 cans black beans, not drained 1 can white corn, drained 1 teaspoon ground cumin 1 1/2 teaspoon dried oregano 1 1/2 teaspoon dried basil 2 teaspoon kosher salt In a large pot heat oil. Add chopped veggies and saute until tender. Add chili powder, tomatoes, Rotel, beans, corn, salt and spices. Bring to boil. Cover on low heat. Simmer, stirring occasionally.
