Vegan question

Group,

 

I am hoping to make my first ever vegan cake for someone's birthday this week.

However, I was going through the files and I see it says to use a vegan sugar?

I am a little confused. What is in sugar that would make it not vegan and how

do I know if mine is vegan? Thanks so much for helping me out on this.

Mindy,

 

Some white sugar is filtered through bone char, making it not vegan. It

depends on the brand though. But from what I remember, cane sugar is usually

filtered, but beet sugar is not. But I could have that reversed. Turbinado,

sucanat and organic sugar all are vegan.

That's my understanding. It's more expensive than plain white sugar -- I

usually buy beet sugar. I bought some raw sugar / turbinado one time and

made brownies with it -- that made for such good, moist brownies! If I

remember right, I didn't have to use quite as much raw sugar as I would

refined.... I think.
