Guest guest
I will use the canned creamed corn in corn fritters and also when I make my potato corn chowder. I also use canned beans as I don't always have time to start with dried beans. I also keep vegetarian refried beans in the cabinet. Gayle In a message dated 7/5/2009 3:09:54 P.M. Mine are canned blackeyed peas ( " fresh-shelled " preferred, but I'll do with " cooked from dry " blackeyes as well), and canned cooked hominy. I have purchased dried hominy and have used it a couple of times--it's okay, but I'm mostly used to opening up a can of white or yellow hominy. Oh yes, and I like canned " butterbeans " Oh yes, and I like canned " butterbeans " <WBR>, mostly because I ca We have " large lima beans " dried, but not the big, starchy (almost remind me of potatoes!) butter-beans. One of my favorite ways to eat these canned vegetables is to mix them together. I have had (canned) blackeyed peas and (canned) hominy mixed together many times. Come to think of it, I think that mixing butter-beans in with these other 2 would also be really good! I usually add some sauteed onion and a bit of hickory-smoke flavored salt (or liquid smoke and seasoned salt) to these mixed-together foods. If there is a GOOD " hickory smoke " or smoky-sweet flavored vegetarian " sausage " , " ham " or " bacon " -flavored food product, I'd say that might be good chopped up and stirred in with it, too. Anyway, I think the combination of flavors and textures of these 2--blackeyed peas and hominy is interesting and tasty together. Guest guest
I forgot I also used canned tomatoes. In a message dated 7/5/2009 6:06:53 P.M. Mushrooms can be slimy this way but they're good for casseroles (cheaper and easier than fresh). I always rinse beans and corn thoroughly because of all of the salt in them. Green Giant brand now has a corn option " no added salt " -- I got that last time instead of the generic brand. My mom and sister LOVE canned asparagus, but I just can't stand it, especially after acquiring a taste for fresh, steamed asparagus, mmm....! I never liked canned green beans (tried to hide them under my plate, in my milk glass, etc - because the dog wouldn't even eat them) and still don't, though I'll eat them if I have to. I was never subjected to canned spinach, so I don't know what to think about that! I love canned apricots and mandarin oranges, too. Had too much of peaches and pears growing up. Audrey S.
